PRIMARY PURPOSE:

 

            Responsible for supervising food service managers in technical and procedural work methods. Responsible for ensuring that school facilities are in compliance with all local, state, and federal policy and procedures.

 

QUALIFICATIONS:

 

Education/Certification

Bachelor’s of Science in Food and Nutrition or in Restaurant, Hotel, and Institutional Management or Equivalent years experience in a food service establishment

Texas School Food Service Association Level V Certifiable

Completion of a credited sanitation course and maintain certification

Driving record that is insurable by Plano ISD’s insurance carrier

30 hours of Professional Development annually

 

Special Knowledge/Skills:

Knowledge of food production and management concepts, ability to ensure quality control measures are in place

Knowledge of current Federal Child Nutrition Programs

Knowledge of all USDA guidelines and procedures

Knowledge of IBM compatible computer systems utilizing software for word

processing, spreadsheets, electronic mail, and other food service software applications

Competence in adult education techniques, classroom education techniques, materials

development and evaluation

Ability to communicate well, both verbally and written

 

Experience

Three years of management experience in a food service and or related establishment

 

  

MAJOR RESPONSIBILITIES AND DUTIES:

 

            Schedule campus visitations for monitoring purposes a minimum of 80% of the work week

 

            Supervise and evaluate food service managers at designated campuses serving as a liaison between the

            FANS administrative staff and the campus principal and staff. 

 

Perform on site visitation reviews to evaluate operational practices for production management, quality control,

sanitation, safety, personnel management and parent/student involvement

 

            Review, monitor and evaluate monthly profit and loss reports

 

Educate FANS managers on the rules, regulations, policies, procedures, and standards set by the department

 

            Monitor the Federal Breakfast and Lunch Program to ensure regulations are being met

 

            Provide direct supervision during emergency situations at assigned campuses

 

            Provide assistance to managers in the following areas:  organizational skills, technical knowledge, and required

            paperwork including production records and work schedules

 

            Evaluate staff requirements at assigned campus sites

 

            Responsible for staff development and in-service training programs

 

            Completion of FANS manager evaluations

 

            Participate in testing and evaluation of all food and non-food service products

 

            Assist with special events such as catering/concessions and/or projects as assigned by FANS director and/or

            administrative staff

 

            Attend and participate in all meetings as scheduled by the food service director

 

            Participate in departmental administrative functions including budgeting, purchasing, and planning as related

            to the development and updates of operational and strategic plans

 

            Attend workshops, district staff development sessions, and other continuing education courses to improve

            supervisor’s basic knowledge of food service operations

 

            Follow all rules, regulations and policies of Plano ISD and follow directives from administrative staff

 

            Assist with training of Dietetic students during their internship rotation

 

            Perform other functions that may be assigned by the administrative staff

 

EQUIPMENT USED:

 

Various, computers, printers, copiers, calculators, computer hardware and software systems, AV equipment, fax,

scanner; and audiovisual equipment.  Knowledge of operational techniques for large and small equipment.

Job Goal:

Ensure high standards of quality nutrition and efficiency in all School Nutrition endeavors by the establishment and maintenance of departmental programs through instruction, implementation, and supervision.

Responsibilities:

1. Demonstrate behavior that is professional, ethical and responsible to serve as a role model for all Departmental staff;

2. Develop all menus to ensure compliance at all times with Departmental, TDA and USDA regulations;

3. Evaluate and conduct nutrient analysis of menus to ensure compliance at all times with Departmental, TDA and USDA regulations;

4. Evaluate and refine department recipes and procedures;

5. Develop and maintain department production records and procedures;

6. Monitor, coordinate and maintain appropriate records for students with special dietary needs;

7. Write special diets, and instruct employees on food purchasing and preparation techniques;

8. Provide assistance and nutrition information for promotions and marketing projects;

9. Develop and maintain Departmental programs in student and parent involvement;

10. Develop and maintain the Department's facilities use as a "learning laboratory" for students and as a resource center for educators;

11. Develop and maintain Departmental training programs for all personnel;

12. Plan and present in-service training and manager's meetings, as assigned;

13. Maintain good report with students, educators, service and support personnel, civic groups, parents, and the general public;

14. Actively seek means to improve community awareness of School Nutrition operations, aims and objectives;

15. Conduct all operations in accordance with applicable District, State and Federal laws and regulations;

16. Conduct inspections and evaluations of individual cafeterias, as assigned, to ensure proper operation;

17. Prepare reports on various units as required;

18. Initiate annual contract renewal, plan, organize and supervise the Summer Food Service Program;

19. Attend continuing education programs to maintain ADA and TDA certification;

20. Perform other duties as assigned by the School Nutrition Director.

2009-2010 Salary Range:  $38,676-$53,961 (227 days)
